Elevate pizza night with lamb, spinach, sweet tomatoes, and toasted pine nuts for a gourmet twist!
Ingredients:
  • 100g pizza cheese
  • 2 Large Thin & Crispy Pizza Bases
  • 80ml pizza sauce
  • 400g Lamb Rump Steaks with Mint & Rosemary
  • 120g pkt Baby Spinach & Rocket
  • 200g Perino tomatoes, halved
  • 1 small red onion, thinly sliced
  • 20g parmesan
  • 20.00 ml pine nuts, toasted
  • 60ml caesar salad dressing
Instructions:
  • Preheat your oven to 230°C. Line two baking trays with baking paper and place the pizza bases on them. Evenly spread pizza sauce and sprinkle pizza cheese on top. Bake for 12 minutes, swapping trays halfway through, until the cheese melts and the bases are crisp.
  • Preheat a chargrill to medium-high heat. Grill the lamb for 3 minutes on each side for a medium cook, or until done to your preference. Place the lamb on a plate, cover it with foil, and let it rest for 5 minutes before slicing.
  • In a large bowl, toss together the spinach, arugula, tomato, onion, Parmesan, and half of the pine nuts.
  • Transfer the pizzas onto a lovely serving platter. Add the savory lamb and scatter a handful of the salad on top. Drizzle generously with half of the flavorful dressing, then season to taste. Accompany with the rest of the salad, sprinkle with pine nuts, and serve with the remaining dressing on the side.
