Elevate your BBQ with an easy overnight marinade for the juiciest steaks, paired with a tangy lemon buttermilk sauce.
Ingredients:
  • 5.00 gm smoked paprika
  • 20.00 ml finely chopped thyme
  • 1 tsp finely grated lemon rind
  • 80ml olive oil
  • 6 (about 250g each) Graze Grass Fed Beef Scotch Fillet Steaks
  • 60ml buttermilk
  • 60ml creme fraiche
  • 11.80 gm Dijon Mustard
  • 20.00 ml sherry vinegar
  • 1 small garlic clove, crushed
  • 1 lemon, rind finely grated, juiced
  • 82.50 ml finely chopped chives
Instructions:
  • Combine garlic, paprika, thyme, lemon rind, and 1/4 cup (60ml) oil in a large bowl. Mix well. Add steaks and coat evenly. Refrigerate for at least 30 minutes, or overnight for optimal flavor infusion.
  • In a bowl, combine buttermilk, crème fraîche or sour cream, oil, mustard, vinegar, garlic, lemon rind, and lemon juice. Season with salt and pepper. Stir in chives and refrigerate until chilled.
  • Preheat a barbecue grill or chargrill over medium-high heat. Season the steaks and grill for 3-4 mins per side for medium-rare or until your desired doneness. Rest the steaks on a plate, loosely covered with foil, for 5 mins before serving.
  • Slice the steaks thickly and artfully present them on a serving platter, elegantly drizzling with the tantalizing buttermilk sauce before serving.
