Delicious surprise: leftover cabbage and ham hock creation.
Ingredients:
  • 1 (16 ounce) package dried lima beans, soaked overnight
  • 2 smoked ham hocks
  • 8 cups water
  • 5 cups shredded cabbage
  • 0.5 cup butter
  • 1.5 teaspoons salt
  • 0.75 teaspoon ground black pepper
  • 0.75 teaspoon garlic powder
  • 1 (28 ounce) can diced tomatoes
  • 1 pound smoked sausage, sliced
Instructions:
  • Combine lima beans, ham hocks, water, cabbage, and butter in a large pot. Season with salt, pepper, and garlic powder. Bring to a boil, then simmer with a slightly cracked lid for 1 1/2 hours. Add tomatoes and sausage, simmer until beans are tender, about 15-20 minutes.
