Delicious surprise: leftover cabbage and ham hock creation.
Ingredients:
1 (16 ounce) packagedried lima beans, soaked overnight
2smoked ham hocks
8cups water
5cups shreddedcabbage
0.5 cupbutter
1.5 teaspoons salt
0.75 teaspoongroundblack pepper
0.75 teaspoongarlic powder
1 (28 ounce) candiced tomatoes
1poundsmoked sausage, sliced
Instructions:
Combine lima beans, ham hocks, water, cabbage, and butter in a large pot. Season with salt, pepper, and garlic powder. Bring to a boil, then simmer with a slightly cracked lid for 1 1/2 hours. Add tomatoes and sausage, simmer until beans are tender, about 15-20 minutes.
