Create fun beaker-shaped biscuits for curious minds.
Ingredients:
  • 2 egg yolks
  • 437.50 ml plain flour
  • 161.25 gm caster sugar
  • 185g butter, chilled, chopped
  • 4.40 gm vanilla extract
  • 2 egg whites
  • 450.00 gm pure icing sugar, sifted
  • 2.65 gm lemon juice
  • Red, blue and yellow gel food colourings
  • 2 tsp white cachous
Instructions:
  • In a food processor, combine flour, sugar, and butter until mixture resembles fine breadcrumbs. Add egg yolks, vanilla, and 2 tablespoons chilled water and mix until just combined. Transfer the dough onto a floured surface, knead until smooth, then shape into 2 discs. Cover with plastic wrap and refrigerate for 30 minutes.
  • 1. Preheat your oven to 180C/160C fan-forced and prepare 2 large baking trays with baking paper. 2. Roll out your pastry between 2 sheets of baking paper until it is 5mm thick. 3. Use a template to cut out 12 beaker shapes from the pastry.
  • Arrange the biscuits on trays. Bake in batches for 15 minutes, swapping trays halfway through. Let them stand for 10 minutes, then cool on a wire rack.
  • Prepare Royal icing: Start by placing the egg whites in a bowl. Slowly mix in the icing sugar while whisking until the mixture is smooth and well combined. Add the juice and stir it in. Divide the icing evenly between four separate bowls. Keep one portion white, and color the other portions red, blue, and yellow as desired. Place each colored icing into its own snap-lock bag and cut off a corner for piping. Use a reference image to guide you as you pipe the icing onto the biscuits. Gently press cachous onto the biscuits to create bubbles. Let the biscuits sit for 30 minutes to allow the icing to set. Serve and enjoy your royal icing biscuits.
