Nutritious veggie soup for guilt-free indulgence.
Ingredients:
  • 18.20 gm olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 400g small chat potatoes, lightly chopped (see Notes)
  • 1020.00 gm vegetable liquid stock
  • Mutti Polpa Finely Chopped Tomatoes 400g
  • 500.00 gm water
  • 2 x 300g cans soya beans, rinsed, drained (see Notes)
  • 1 bunch English spinach, trimmed, washed, chopped
  • 82.50 ml parsley leaves, chopped
Instructions:
  • In a large saucepan over medium heat, sauté onion and garlic until slightly softened, about 4 to 5 minutes. Add potatoes and toss for 1 minute.
  • Combine stock, juicy tomatoes, and water in a pot and bring to a boil. Reduce heat to medium and simmer uncovered for 20 minutes.
  • Add the soybeans and continue cooking without covering for 5 more minutes.
  • Add the spinach and parsley, cooking for 1 minute until the spinach wilts. Season with pepper to taste.
