Impress guests with healthy green bean bundles wrapped in crispy noodles.
Ingredients:
  • 85g packet 99% fat-free 2-minute noodles (see note)
  • 250g green beans, trimmed
  • Alfa One rice bran oil cooking spray
  • 81.68 gm whole-egg mayonnaise
  • 1 tsp finely grated lemon rind
  • 21.00 gm lemon juice
Instructions:
  • Place the noodles in a heatproof bowl and cover them with boiling water. Let them stand for 2 minutes or until just tender. Use a fork to separate the noodles, then drain them.
  • - Bring water to a boil in a medium saucepan. Boil beans for 3 minutes until vibrant green and slightly tender. Drain and cool in chilled water. Pat dry with paper towels. Arrange beans into 10 portions of 4 to 5 beans each. Separate noodles into 10 bunches. Wrap one bunch of noodles around the center of each bean portion, repeating until all beans and noodles are used.
  • Spray a large frying pan with oil and heat over medium-high heat. Add half of the bean bunches to the pan. Spritz noodles with oil and cook for 2 minutes on each side until they are crispy and golden. Transfer to a large plate. Repeat the process with the remaining bean bunches and oil.
  • In a bowl, mix together mayonnaise, lemon zest, and lemon juice. Serve the bean bundles with the delicious mayo mixture.
