Try this quick and budget-friendly bean and squash side dish for a healthy summer option.
Ingredients:
  • 500g beans, trimmed
  • 8 button squash, halved
  • 54.60 gm olive oil
  • 250g cherry tomatoes
  • 1 garlic clove, finely chopped
Instructions:
  • Bring a large saucepan of water to a boil, then add the beans and squash. Cook for 3 minutes, or until tender. Drain thoroughly and set aside.
  • In a large frying pan over medium heat, warm the oil. Toss in the tomatoes and cook, stirring occasionally, for about 4 minutes until they just start to soften. Mix in the garlic and cook for 1 more minute, stirring occasionally.
  • Combine the beans and squash, ensuring they are evenly coated in the oil and heated through.
