Beaumont Ranch Potato Salad

Texas ranch potato salad: Potatoes seasoned with garlicky dressing, mixed with bacon, celery, green onion, pickle, and mayo. Serves a crowd.
Ingredients:
5pounds red potatoes
1 (.7 ounce) packagedry Italian salad dressing mix (such as Good Seasons®)
0.25 cuptarragon vinegar
0.25 cupwater
1cupextra-virgin olive oil
0.5 cupchoppedcelery
1cupreal bacon bits
0.25 cupchoppeddill pickle
0.25 cupchoppedgreen onion
3cups mayonnaise
Instructions:
In a large pot, place the potatoes and cover them with water. Bring to a boil over high heat, then lower the heat to medium-low, cover the pot, and simmer until the potatoes are tender, approximately 20 minutes. Drain the potatoes and let them steam dry for a minute or two.
Combine the dry Italian dressing mix, tarragon vinegar, water, and olive oil in a bowl and whisk until well combined. Set aside.
Transfer the hot potatoes to a spacious bowl and cut them into chunks using a table knife. Pour the dressing over the potatoes, mix well, and allow them to cool. Fold in celery, bacon bits, dill pickle, green onion, and mayonnaise until all ingredients are combined. Serve and enjoy!
