Vibrant Roman market bowl with fresh, flavorful ingredients that shine in versatile ways - as a side, antipasto, pasta, bruschetta topping, or frittata mix. Affordable, delicious, and full of rustic charm.
Ingredients:
  • olive oil
  • 1 clove of garlic
  • 50 g piece of higher-welfare guanciale (cured pig’s cheek) or smoked pancetta
  • 4 firm courgettes
  • 200 g ripe cherry tomatoes on the vine
  • 4 sprigs of fresh flat-leaf parsley
Instructions:
  • Heat a large frying pan over high heat with 1 tablespoon of oil. Crush the garlic clove and add to the pan, infusing the oil with its aroma. Cut the guanciale into 1cm pieces and add to the pan to render the fat. Prepare the courgettes, then add to the pan along with salt and pepper. Dice the tomatoes, remove seeds, and add to the pan. Roughly chop the parsley and add. Reduce heat to medium and cook for about 15 minutes, stirring occasionally until softened. For a fresher taste like Nonna Maria's, cook for 40 minutes on low heat for a sweeter flavor. Adjust seasoning before serving. Enjoy the delicious flavors of this courgette dish at its best!
