Easy and delicious Italian-inspired appetizer, perfect for entertaining. Great with any main dish.
Ingredients:
  • 1 loaf French bread, sliced
  • 0.5 sweet onion, finely chopped
  • 2 cloves garlic, chopped
  • 1 (2.25 ounce) can sliced black olives, drained
  • 3 tablespoons extra virgin olive oil, divided
  • 1 tablespoon chopped fresh oregano
  • 2 teaspoons chopped fresh basil
  • 2 teaspoons chopped fresh parsley
  • 2 large fresh tomatoes, diced
  • 1 cup crumbled feta cheese
  • 0.25 cup grated Parmesan cheese
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C).
  • Lay out the bread slices neatly on a baking sheet. Combine onion, garlic, olives, 2 tablespoons of olive oil, oregano, basil, and parsley in a bowl. Add tomatoes and mix gently. Spread the tomato mixture over the bread slices. Sprinkle with feta and Parmesan cheese, then drizzle with the rest of the olive oil.
  • Bake until cheese is gooey and bread is golden, about 10 minutes in the preheated oven.
