Crispy golden brown Southern-style pork chops fried using traditional techniques for a tender and delicious result.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1.5 teaspoons ground paprika
  • 0.5 teaspoon garlic powder
  • 0.5 cup milk
  • 0.5 (16 ounce) package saltine crackers, crushed
  • 0.5 cup dry potato flakes
  • 0.5 cup all-purpose flour
  • 4 (3/4 inch) thick pork chops
  • salt and pepper to taste
  • 1.5 cups vegetable oil for frying
Instructions:
  • Combine flour, paprika, and garlic powder in one bowl. Whisk together eggs and milk in another bowl. Combine crushed cracker crumbs, potato flakes, and flour in a third bowl.
  • Use a fork to tenderize the pork chops. Season with salt and pepper.
  • Coat pork chops in flour, dip in beaten egg, then press into cracker crumbs, ensuring they're fully coated. Shake off any excess and gently toss to remove loose crumbs.
  • In a large, deep skillet over medium heat, heat the oil until shimmering. Carefully add the pork chops and fry until cooked through with a crispy, golden-brown crust, about 5 minutes per side. Remove and drain on paper towels.
