Zesty lime-infused rice with fresh cilantro and spicy green chiles.
Ingredients:
  • 0.5 onion, chopped
  • 1 (4 ounce) can green chilies
  • 1 tablespoon minced garlic
  • 1 lime, juiced
  • 0.5 bunch cilantro, chopped
  • 3 cups water
  • 4 teaspoons chicken bouillon granules
  • 1 teaspoon salt
  • 1 tablespoon butter, softened
  • 3 cups uncooked instant rice
Instructions:
  • Combine onion, green chiles, garlic, and lime juice in a food processor and blend until smooth. Add cilantro and pulse until finely chopped and well mixed.
  • In a saucepan, bring water to a boil. Stir in cilantro mixture, chicken bouillon granules, salt, butter, and rice. Bring back to a boil, then reduce heat to medium-low, cover, and simmer until the rice absorbs all the liquid, about 20 minutes.
