Light and fluffy quiche made with low-fat cheese and evaporated milk, perfect for a guilt-free breakfast or brunch.
Ingredients:
  • 1 prepared 9-inch single pie crust
  • 1 tablespoon olive oil
  • 4 green onions, chopped
  • 0.5 pound cooked ham, cubed
  • 1 cup fat-free egg substitute
  • 7 fluid ounces fat-free evaporated milk
  • 0.25 cup shredded part-skim mozzarella cheese
  • 1 tablespoon grated Parmesan cheese
  • 1 teaspoon chopped fresh chives
Instructions:
  • Preheat the oven to 325°F (165°C) while you effortlessly press the pie crust into an 8-inch pie dish.
  • In a skillet over medium heat, sauté green onions in olive oil until wilted and slightly browned, about 2 to 3 minutes. Take off the heat, then layer the ham in the pie crust followed by the green onions.
  • In a bowl, combine egg substitute, evaporated milk, and mozzarella cheese. Pour the mixture over the ham. Sprinkle with Parmesan cheese and chives.
  • Bake in a preheated oven at 375 degrees F for 20 minutes. Increase heat to 350 degrees F and bake until quiche is golden brown, about 15-20 minutes. Let the quiche rest for another 30 minutes until eggs are fully set before serving.
