Elevate roast beef leftovers with a vibrant salad using fresh ingredients for a satisfying meal.
Ingredients:
  • 550g quinoa
  • 60g baby spinach and rocket leaves
  • 250g cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 20.00 ml chopped flat-leaf parsley
  • Thinly sliced roast beef, to serve
  • Balsamic dressing, to serve
Instructions:
  • In a large bowl, mix quinoa, spinach, arugula, tomato, onion, and parsley. Distribute the mixture into serving bowls. Season to taste. Top with beef and drizzle with dressing before serving.
