Budget-friendly casserole featuring beef, red wine, and creamy mashed potatoes.
Ingredients:
  • 40g (1/4 cup) plain flour
  • Salt & freshly ground black pepper
  • 800g gravy beef or casserole steak, cut into 3cm cubes
  • 60ml (1/4 cup) vegetable oil
  • 1 brown onion, halved, coarsely chopped
  • 1 garlic clove, crushed
  • 250ml (1 cup) dry red wine
  • 375ml (1 1/2 cups) beef stock
  • 375ml (1 1/2 cups) tomato pasta sauce
  • 100g pitted kalamata olives
  • 2 tsp finely grated orange rind
  • 1/4 tsp allspice
  • 1/4 tsp dried chilli flakes
  • 62.50 ml loosely packed coarsely chopped fresh continental parsley
  • 1kg sebago (washed) potatoes, peeled, cut into 2cm cubes
  • 160ml (2/3 cup) milk
  • 50g butter
  • Pinch of salt
Instructions:
  • Preheat your oven to 180°C. In a large bowl, season the flour with salt and pepper, then gently coat the beef in the mixture.
  • In a large flame-proof, ovenproof casserole dish, heat 1 tablespoon of oil over medium heat. Cook half of the beef, stirring occasionally, for 5 minutes until browned. Transfer to a bowl. Repeat with another 1 tablespoon of oil and the rest of the beef.
  • In the same dish, heat the rest of the oil over medium-high heat. Sauté the onion and garlic for 4-5 minutes until the onion softens. Mix in the beef. Pour in the wine, stock, tomato pasta sauce, olives, orange rind, allspice, and chili. Bring to a boil, then cover tightly and remove from heat.
  • After baking for 2 hours or until the beef is tender, take it out of the oven. Gently mix in the parsley, then season with salt and pepper to taste.
  • To prepare creamy mashed potatoes, boil the potatoes in a large saucepan filled with cold water until tender, about 25 minutes. Drain the potatoes and return them to the pan. Add milk and butter, then mash until smooth using a potato masher or a fork. Season with salt to taste.
  • Serve the beef casserole with a side of creamy mashed potatoes for a delicious meal.
