Beef Birria Queso Tacos with Consommé

Indulge in Chef John's savory birria queso tacos - crispy corn tortillas loaded with beef stew, gooey mozzarella, and a flavorful dipping consommé.
Ingredients:
  • 2 cups reserved sauce from Beef Birria recipe
  • 1 cup chicken broth
  • 0.25 cup diced carrots
  • 0.25 cup diced celery
  • 0.5 cup diced cabbage
  • 3 tablespoons reserved beef fat from Beef Birria recipe, or more as needed
  • 8 (5 inch) corn tortillas
  • 2 cups freshly grated Monterey Jack cheese
  • 2 cups shredded Beef Birria
  • 4 tablespoons chopped white onion, or to taste
  • 4 tablespoons chopped fresh cilantro, or to taste
  • 1 medium lime, cut into 4 wedges
Instructions:
  • Prepare the consommé by combining beef birria sauce, chicken broth, carrots, celery, and cabbage in a saucepan over high heat. Simmer until vegetables are tender and the consommé reaches desired consistency, approximately 20 minutes, occasionally scraping off caramelized bits for added flavor. Keep warm on low heat as you make the tacos.
  • Create flavorful tacos: Melt reserved beef fat in a large skillet over medium heat. Place two tortillas in the skillet, flipping until coated in fat. Toast until golden brown, then top with Monterey Jack cheese and shredded beef. Drizzle each taco with 1 tablespoon consommé liquid, and finish with white onion and cilantro.
  • Fold the tacos in half and gently press them down. Cook them, flipping back and forth, until they are golden brown and crispy, which should take 2 to 3 minutes. Transfer them to a plate and continue making the rest of the tacos, adding more fat if needed.
  • Pour the consommé into a bowl and top with the remaining white onion and cilantro. Squeeze fresh lime over the top and serve alongside tacos.
