Family-favorite beef simmered in red wine gravy, garnished with sauteed onions and mushrooms. Deliciously hearty!
Ingredients:
  • 2 pounds lean stew beef
  • 1 cup red wine
  • 4 sprigs fresh parsley
  • 1 sprig fresh thyme
  • 1 bay leaf
  • 4 tablespoons butter
  • 1 onion, sliced
  • 1 tablespoon all-purpose flour
  • 0.25 cup beef broth
  • 2 tablespoons butter
  • 4 ounces bacon, chopped
  • 12 small onions
  • 4 ounces button mushrooms, sliced
Instructions:
  • Mix together the beef, wine, parsley, thyme, and bay leaf in a bowl. Marinate for 3 hours.
  • Take out the beef from the marinade and set it aside. Strain the marinade and keep it for later use. In a large heavy saucepan over medium-high heat, melt 4 tablespoons of butter. Cook the sliced onion until tender. Add the beef and cook until browned. Remove the beef and onion and set them aside. Add flour to the pan and cook until brown, then gradually pour in the beef broth and reserved marinade. Return the beef mixture to the pan, cover, and simmer for 3 hours.
  • In a skillet over medium-high heat, melt 2 tablespoons of butter. Add bacon and small onions, sauté until onions are tender. Add mushrooms and cook until golden brown. Use as a garnish.
