Beef Brisket with Chipotle Tomatillo Sauce

Create a succulent beef brisket in a smoky tomatillo and chipotle sauce using your pressure cooker.
Ingredients:
  • 2 (11 ounce) cans whole tomatillos, drained
  • 1 (7 ounce) can chipotle peppers in adobo sauce
  • 1 yellow onion, chopped
  • 1 (3 pound) beef brisket
Instructions:
  • In a food processor, blend tomatillos, chipotle peppers, tomato sauce, water, salt, and brown sugar until smooth. Set aside.
  • In a pressure cooker over medium heat, sauté the onion and garlic in olive oil until onions are translucent, about 3 minutes. Sear the brisket on both sides. Add the tomatillo mixture, bring to a boil, cover with the lid, and cook on medium pressure for 1 hour and 15 minutes once pressure is reached.
  • Let the pressure cooker release naturally before removing the brisket and serving hot with tomatillo sauce on the side.
