Create a tantalizing feast with aromatic spices and a spread of delicious curries.
Ingredients:
  • 50g butter
  • 2 brown onions, sliced
  • 2cm piece ginger, peeled, grated
  • 1 1/2 tsp ground turmeric
  • 1/2 to 1 tsp chilli powder, to taste
  • 1/2 tsp ground fenugreek (see note)
  • 2 tsp ground coriander
  • 2.50 gm cumin
  • 5.00 gm paprika
  • 1kg piece beef rump steak, fat trimmed, cubed
  • 400ml can Coconut Milk
  • 2 curry leaves
  • Steamed Basmati rice, to serve
  • Pappadums, to serve
Instructions:
  • In a large heavy-based saucepan over medium heat, melt butter until sizzling. Add onions and cook until tender, about 2 minutes. Stir in garlic, ginger, and spices, then continue cooking and stirring for another 5 minutes.
  • Sear the beef until it browns, then incorporate coconut milk, curry leaves, salt, and pepper. Allow it to come to a boil, cover, reduce heat, and let it simmer for 1 hour and 15 minutes until the meat is tender. Serve alongside rice and pappadums.
