Delicious Indian appetizers perfect for any occasion.
Ingredients:
  • Lime wedges, to serve
  • 18.40 gm vegetable oil
  • 1/2 small brown onion, finely chopped
  • 125g beef mince
  • 120g potato
  • 5.00 gm mild curry powder
  • 62.50 ml frozen peas
  • 20.00 ml fresh coriander leaves, finely chopped
  • 21.00 gm lemon juice
  • 3 sheets frozen puff pastry, partially thawed
  • 1 egg, lightly beaten
Instructions:
  • In a medium frying pan over medium heat, sauté onion and garlic in oil until softened, about 3 to 5 minutes. Add mince and potato, breaking up the mince with a spoon, and cook until the mince is browned, about 3 minutes. Stir in curry powder and cook for 1 minute before adding 2 tablespoons of water. Bring to a boil, then reduce heat to low and simmer for 3 minutes. Add peas and cook for an additional 2 to 3 minutes until heated through. Finish by stirring in coriander, lemon juice, salt, and pepper. Let it cool for 20 minutes before serving.
  • Preheat the oven to 200C/180C fan-forced, then generously grease 2 large baking trays and line them with baking paper.
  • Take an 8cm round cutter to cut out 16 rounds from pastry sheets. Add 2 level teaspoons of mince mixture in the center of each round. Brush edges with egg wash. Fold the pastry over to encase the filling, then pinch the edges to seal. Put them on baking trays and brush the tops with egg wash.
  • Bake until golden and puffed, typically 20-25 minutes. Serve with lime wedges on the side.
