Quick and delicious beef empanaditas using Original Bisquick® mix and ground beef for a tasty appetizer in under an hour!
Ingredients:
  • 2 cups Original Bisquick™ mix
  • 1/2 cup hot water
  • 1/4 lb lean (at least 80%) ground beef
  • 1/2 cup chunky-style salsa
  • 1 tablespoon raisins
  • 8 pimiento-stuffed green olives, sliced
  • 1/2 teaspoon ground cumin
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon water
Instructions:
  • Preheat oven to 350°F and line a cookie sheet with cooking parchment paper. In a medium bowl, mix Bisquick and hot water until a stiff dough forms. Allow the dough to rest for 10 minutes.
  • In an 8-inch skillet, sear beef over medium-high heat for 5 to 7 minutes until cooked through; drain any excess grease. Add salsa, raisins, olives, cumin, and cinnamon to the skillet; mix well and set aside.
  • Place the dough on a Bisquick mix-dusted surface and gently coat it by rolling. Shape it into a ball and knead it 10 times. Roll the dough into a 13-inch round, then use a 3-inch cutter to cut it into rounds. Gather any dough scraps, reroll them to 1/8-inch thickness, and cut them to make 20 rounds.
  • Take a generous spoonful of the beef mixture and place it in the center of each dough round. Fold the dough in half over the filling and press the edges firmly with a fork to seal. Arrange them 1 inch apart on a cookie sheet.
  • Combine the egg and 1 tablespoon water in a small bowl, then brush the mixture over the tops of each empanadita. Bake for 14 to 16 minutes, or until golden brown.
