Beef korma and sweet potato cottage pie recipe

Indian-inspired sweet potato shepherd's pie - a fusion of flavors for a delicious, healthy twist!
Ingredients:
  • 18.40 gm vegetable oil
  • 500g No Added Hormones 3 Star Beef Mince
  • 1 brown onion, finely chopped
  • 60g curry paste
  • 250ml tomato puree
  • 125g yoghurt
  • 100g baby spinach leaves
  • 82.50 ml chopped coriander
  • 700g gold sweet potato, peeled, chopped
  • 60ml milk
  • 25g butter, finely chopped
Instructions:
  • In a large frying pan over high heat, heat oil. Add mince and cook, breaking up lumps with a wooden spoon, until browned, about 5 mins. Add onion and cook until softened, about 3-4 mins. Stir in curry paste and cook until aromatic, about 1 min.
  • Pour in the tomato puree and 1/3 cup (80ml) water, then bring it to a boil. Lower the heat and let it simmer for 5-7 minutes until the mixture thickens. Stir in the yogurt, followed by the spinach and coriander. Cook and stir for an additional 1-2 minutes until the spinach wilts.
  • Simmer sweet potatoes in boiling water for 8-10 minutes until tender. Drain and return to the pan. Mash with milk and most of the butter.
  • Preheat the grill to high. Divide the beef mixture among four 1½-cup (375ml) ovenproof dishes. Spread the sweet potato mixture on top and dot with the remaining butter. Grill for 5 minutes or until golden brown. Season to taste.
