Tender beef in a luxurious, flavorful sauce, loved worldwide for its irresistible richness.
Ingredients:
  • 2 x 400ml cans coconut milk
  • 262.50 gm rendang curry paste (see related recipe)
  • 1kg beef chuck steak, cut into 3cm pieces
  • 3 dried bay leaves
  • Steamed White Medium Grain Rice, to serve
  • Shredded coconut, toasted, to serve
Instructions:
  • In a large saucepan, combine the rich coconut milk with aromatic curry paste. Heat over medium-high heat until it reaches a boil. Add in the tender beef and fragrant bay leaves, stirring until well mixed.
  • Lower the heat to medium-low and let it gently simmer for 3 hours, stirring every now and then, until the beef is fork-tender and the sauce has thickened.
  • Portion the rice into individual serving bowls, layer with the rich rendang, and finish off with a generous sprinkle of shredded coconut.
