Tender beef in a luxurious, flavorful sauce, loved worldwide for its irresistible richness.
Ingredients:
2 x 400ml canscoconut milk
262.50 gm rendang curry paste (see related recipe)
1kg beef chuck steak, cut into 3cm pieces
3dried bay leaves
SteamedWhite Medium Grain Rice, to serve
Shredded coconut, toasted, to serve
Instructions:
In a large saucepan, combine the rich coconut milk with aromatic curry paste. Heat over medium-high heat until it reaches a boil. Add in the tender beef and fragrant bay leaves, stirring until well mixed.
Lower the heat to medium-low and let it gently simmer for 3 hours, stirring every now and then, until the beef is fork-tender and the sauce has thickened.
Portion the rice into individual serving bowls, layer with the rich rendang, and finish off with a generous sprinkle of shredded coconut.
