Classic beef stew with fluffy dumplings, reminiscent of Grandma's cooking.
Ingredients:
  • 1.5 pounds cubed beef stew meat
  • 1 cup sliced onion
  • 2 cloves garlic, minced
  • 2 cups water
  • 1 teaspoon salt
  • 0.125 teaspoon pepper
  • 1 bay leaf
  • 2 cups cubed potatoes
  • 1.5 cups diced carrots
  • 1 cup sliced celery
  • 0.5 cup chopped green pepper
  • 1 cup sliced fresh mushrooms
  • 1.5 cups biscuit baking mix
  • 0.5 cup milk
  • 3 tablespoons butter, melted
Instructions:
  • Coat cubed beef with flour in a bowl.
  • In a heavy skillet over medium-high heat, melt 4 tablespoons of butter until sizzling. Coat beef cubes in flour by shaking in a bag or tossing in a bowl. Add the coated cubes to the skillet and sear until golden brown all over. Remove from the skillet and set aside.
  • Saute onion and garlic until soft. Add back the meat, along with water, parsley, salt, pepper, and bay leaf. Simmer covered on low for 1 hour, stir occasionally and add water if necessary. Add potatoes, carrots, celery, and green pepper and cook for an additional 15 minutes. Discard bay leaf and mix in mushrooms.
  • Combine baking mix, 3 tablespoons of melted butter, and milk in a small bowl until just blended. Spoon tablespoonfuls of the dough into the stew. Cook uncovered for about 10 minutes. Cover and simmer for an additional 10 minutes, or until dumplings are tender.
