Beef with Pea Pods

Transport your taste buds to the Orient with this easy one-pan Asian stir-fry!
Ingredients:
  • 1 pound beef boneless sirloin steak
  • 1 tablespoon vegetable oil
  • 1 garlic clove, finely chopped
  • 2/3 cup Progresso™ beef flavored broth (from 32-ounce carton)
  • 1 tablespoon soy sauce
  • 1 teaspoon finely chopped gingerroot or 1/4 teaspoon ground ginger
  • 1 package (6 ounces) frozen snow (Chinese) pea pods, thawed and drained
  • Hot cooked rice, if desired
Instructions:
  • Trim the fat from the beef and slice it into 2-inch strips along the grain. Then, cut the strips into 1/4-inch slices across the grain.
  • 1. Preheat a 10-inch skillet or wok over high heat for 1 to 2 minutes. Add oil and swirl to coat the skillet. Cook beef and garlic, stirring constantly, for about 3 minutes until beef is browned. Season with salt and pepper, then pour in broth and bring to a boil.
  • Combine cornstarch, water, and soy sauce with the beef mixture. Stir continuously until the mixture thickens and comes to a boil. Boil for another minute while stirring constantly. Note that the sauce will be thin.
  • Add the gingerroot and pea pods to the mixture and let it cook without a lid for around 2 minutes, stirring occasionally until the pea pods are perfectly crisp-tender. Serve the dish on a bed of fluffy rice.
