Beefeater´s Pepper-Crusted Roast

Impress your loved ones with a savory peppercorn and thyme beef roast.
Ingredients:
  • 1 tablespoon butter, melted
  • 1 tablespoon Worcestershire sauce
  • 1 (4-lb.) beef rib roast
  • 3 tablespoons crushed multi-colored peppercorns
  • 1 tablespoon chopped fresh thyme or 1 teaspoon dried thyme leaves
Instructions:
  • Preheat the oven to 350°F. In a small cup, mix together butter and Worcestershire sauce until well combined. Put the roast in a shallow roasting pan. Brush the roast with the butter mixture. Sprinkle peppercorns over the top of the roast and add a dash of thyme.
  • Roast at 350°F for 1 1/2 to 2 hours, or until a meat thermometer reads 135°F for medium-rare or 150°F for medium.
  • After taking the roast out of the oven, generously cover it with a foil tent and allow it to rest for 10 to 15 minutes before slicing.
