Tender beer can chicken with moist, crispy skin.
Ingredients:
  • 1 4-pound whole chicken
  • 2 tablespoons extra virgin olive oil or other vegetable oil
  • 1 opened, half-full can of beer, room temperature
  • 1 tablespoon kosher salt or sea salt
  • 2 tablespoons chopped fresh thyme leaves, or 1 Tbsp dried thyme
  • 1 tablespoon black pepper
Instructions:
  • Whether using charcoal or a gas grill, create a two-zone fire by placing the coals on one side of the grill or firing up only half of the burners.
  • Prepare the seasoned chicken: Start by removing the neck and giblets from the chicken cavity, if included. Combine salt, pepper, and thyme in a small bowl, then massage the mixture all over the chicken. Finish by rubbing the chicken with olive oil until fully coated.
  • Gently place the chicken upright on a half-filled, open beer can, optionally adding a sprig of thyme, rosemary, or sage to the can.
  • Grill on indirect heat: Place the chicken on the cool side of the grill with the legs and beer can for support. Cover and cook for at least an hour without peeking. After an hour, check the chicken and add more coals if needed for a charcoal grill. Check the chicken every 15 minutes until a meat thermometer inserted into the thickest part of the thigh reads 165°F. Cooking time may vary; a 4-pound chicken typically takes about 1 1/2 hours. If you don't have a meat thermometer, check for clear juices by poking the thigh with a knife to ensure doneness.
  • Gently transfer the chicken with the beer can inside to a tray using a spatula and tongs. Allow the chicken to rest for 10 minutes. Carefully remove the chicken from the can, using tongs if needed. Share your feedback by rating and commenting below!
