Beer-infused chicken with stout, served with creamy mashed potatoes and seasoned roasted veggies. Perfect comfort food.
Ingredients:
  • 2 tablespoons butter
  • 1 large onion, cut in half, thinly sliced (1 cup)
  • 4 bone-in chicken thighs, skin removed
  • 4 chicken drumsticks, skin removed
  • 3/4 teaspoon salt
  • 3/4 cup stout or dark beer
  • 2 tablespoons all-purpose flour
Instructions:
  • In a wide skillet, melt butter over medium-high heat. Sauté onion for 3 to 5 minutes until crisp-tender. Season all sides of chicken with salt and pepper. Add chicken to the skillet and cook for 4 to 6 minutes until browned, turning it once.
  • Add beer to skillet, allowing it to envelop the chicken. Bring the mixture to a boil, then lower the heat. Cover and gently simmer for 45 to 50 minutes, or until the chicken's juices run clear when the thickest part is pierced down to the bone (minimum temperature 165°F). Remove the chicken from the skillet and keep it covered to retain warmth.
  • Combine flour and 1/4 cup hot cooking juices in a small bowl, whisking until smooth. Pour into skillet and cook over medium heat for 5 to 6 minutes, stirring constantly with a whisk until thickened and bubbly. Serve chicken with gravy.
