Ingredients:
  • 5 medium beets, scrubbed
  • 0.5 cup chopped walnuts
  • 0.5 cup mayonnaise
  • 20 pitted prunes, chopped
  • 3 cloves garlic, pressed
  • salt to taste
Instructions:
  • In a saucepan, cover the beets with water and bring to a boil. Simmer until easily pierced with a fork, around 20 minutes. Drain, remove peels, and grate using the largest setting. Chill under cold water, then transfer to a serving bowl.
  • Combine walnuts, prunes, and garlic with the beets, then fold in the mayonnaise and season with salt to taste.
