Delight the family with these kid-friendly beetroot muffins!
Ingredients:
  • 200g cooked beetroot
  • 270g plain flour
  • 10.00 gm baking powder
  • 50g sultanas
  • 1 egg
  • 300ml buttermilk
  • 50g melted butter
  • 50g parmesan cheese
  • 2 tsp fresh thyme leaves
Instructions:
  • Grate beetroot into a sieve and let it drain over the sink for 30 minutes. In a bowl, sift flour and baking powder, then mix in sultanas and season with salt and pepper.
  • Combine the egg, buttermilk, and butter, then gently mix into the flour mixture with beetroot, half of the parmesan, and thyme. Spoon into greased muffin pans, sprinkle the remaining parmesan and thyme on top. Bake for 15-20 minutes. Enjoy warm with soups or salads.
