Create a creamy beetroot dip with mayo and olive oil. Perfect for serving with chips or veggies. Your guests will devour it!
Ingredients:
  • 425g can beetroot, drained (see note)
  • 77.55 gm sour cream, plus extra to serve
  • 61.88 gm mayonnaise
  • 36.40 gm extra virgin olive oil
  • 8 fresh mint leaves (optional), plus extra to serve
Instructions:
  • Combine beetroot, sour cream, mayonnaise, oil, and mint (if desired) in a food processor. Blend until velvety and well mixed.
  • Transfer the flavorful mixture to a beautiful serving bowl. Add a dollop of extra creamy sour cream and garnish with more fresh mint leaves. Serve and enjoy your exquisite creation.
