Spicy jalapeno-infused minestrone soup, perfect for cozy winter evenings.
Ingredients:
  • 2 tablespoons butter
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 cups chicken stock
  • 1 (14 ounce) can beef broth
  • 1.5 cups water
  • 2 (6 ounce) cans tomato paste with basil (such as Hunt's®)
  • 1 (14.5 ounce) can diced tomatoes with jalapenos
  • 2 potatoes, diced
  • 3 stalks celery, chopped
  • 1 zucchini, chopped
  • 3 carrots, chopped
  • 1 (15 ounce) can garbanzo beans, drained
Instructions:
  • In a large pot, melt butter over medium heat, sauté the onion and garlic until the onion is translucent, for about 5 to 10 minutes. Pour in the chicken stock, beef broth, and water, then bring to a gentle simmer. Mix in the tomato paste, tomatoes with jalapenos, and potatoes; simmer until the potatoes are slightly tender, for 10 to 15 minutes.
  • Combine celery, zucchini, carrots, and garbanzo beans into the soup; let simmer until the potatoes are tender and the flavors meld, about 45 minutes.
