Indulge in Belizean bread pudding with coconut milk, condensed milk, and plump raisins - a must-have dessert for any occasion.
Ingredients:
2 large eggs
1 (12 fluid ounce) can evaporated milk
12 fluid ounces coconut milk
6 fluid ounces sweetened condensed milk
4 fluid ounces dark rum
0.5 cupwhite sugar
0.5 cupmeltedbutter
0.25 cupraisins
2teaspoons vanilla extract
1teaspoonground nutmeg
1teaspoonground cinnamon
1loafbread, torn in pieces
Instructions:
Preheat your oven to a toasty 250 degrees F (120 degrees C) while you generously grease a 9x13-inch baking dish.
In a large bowl, vigorously whisk eggs until frothy. Combine evaporated milk, coconut milk, sweetened condensed milk, rum, sugar, melted butter, raisins, vanilla, nutmeg, and cinnamon into the bowl with the eggs; stir until fully incorporated. Gently mix in the bread. Transfer the mixture into the baking dish.
Bake in the oven until golden brown with dry edges, approximately 1 hour.
