Nutty orzo and wild rice salad with colorful veggies and homemade vinaigrette.
Ingredients:
  • 2 cups cooked orzo
  • 0.5 cup cooked wild rice
  • 0.5 cup diced orange bell pepper
  • 0.5 cup diced red bell pepper
  • 0.5 cup frozen corn, thawed
  • 0.5 cup dried currants
  • 0.25 cup diced red onion
  • 0.25 cup vegetable oil
  • 3 tablespoons white sugar
  • 2 tablespoons white wine vinegar
  • 1 teaspoon minced fresh onion
  • 1 pinch ground white pepper
  • 1 pinch paprika
  • 1 pinch garlic powder, or to taste
  • salt to taste
  • salt and ground black pepper to taste
  • 0.25 cup chopped toasted pecans
  • 0.25 cup toasted slivered almonds
  • 0.25 cup chopped fresh parsley
Instructions:
  • In a large bowl, toss together orzo, wild rice, orange bell pepper, red bell pepper, corn, currants, and red onion.
  • Combine vegetable oil, sugar, white wine vinegar, cider vinegar, minced onion, white pepper, paprika, garlic powder, and a pinch of salt in a blender or food processor. Blend until smooth.
  • Combine the pecans, almonds, and parsley with the orzo. Drizzle the desired amount of dressing and toss until everything is coated. Season with salt and pepper to taste.
