Crispy, golden benne wafers - a tasty Southern treat infused with toasted sesame seeds.

  • 1/8 teaspoon baking powder
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon vanilla extract
Instructions:
  • Preheat your oven to 325°F and line your baking sheet with parchment paper, a silpat sheet, or lightly grease it.
  • Enhance the nutty flavor of the sesame seeds by toasting them in a hot skillet until they turn a beautiful golden brown.
  • Prepare cookie dough: In a medium-sized bowl, cream together brown sugar and butter until fluffy. Beat in the egg. Combine flour, salt, and baking powder in a separate bowl, then add to the creamed mixture and mix thoroughly. Fold in toasted sesame seeds, vanilla extract, and lemon juice.
