Berliner Brot (German Christmas Cookie)

German holiday bar cookie with hazelnuts and chocolate, enjoyed during Christmas season only.
Ingredients:
  • 1.25 cups sugar
  • 10.5 tablespoons unsalted butter, at room temperature
  • 2 large eggs
  • 2.33 cups all-purpose flour
  • 0.75 cup unsweetened cocoa powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1 pinch ground cloves
  • 1.333 cups ground hazelnuts
  • 1 cup powdered sugar
  • 1 medium lemon, juiced
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a 9 1/2 x 13-inch baking sheet by greasing it or lining with parchment paper.
  • In a large bowl, use an electric mixer to combine the sugar and butter until creamy. Add the eggs one at a time, mixing until just blended.
  • Combine flour, cocoa powder, cinnamon, baking powder, and cloves in a separate bowl.
  • Combine the flour mixture with the wet mixture, gently mix until just blended. Fold in hazelnuts until just incorporated, creating a smooth dough.
  • Place the dough onto the baking sheet and use a rolling pin to evenly spread it into all corners.
  • Bake in the preheated oven for about 20 minutes until the cookie sheet is set. Then cut into squares while still warm.
  • Mix together the powdered sugar and lemon juice in a small bowl, then generously brush the icing over the cooling bars.
