Delicious berry dessert, perfect for any occasion.
Ingredients:
  • 1 sheet frozen ready-rolled sweet puff pastry
  • 1 eggwhite, lightly beaten
  • 45.00 gm brown sugar
  • 250g mascarpone cheese
  • 150g punnet blueberries
  • 120g punnet raspberries
  • 150g punnet blackberries
Instructions:
  • 1. Preheat oven to 220°C. 2. Allow pastry to thaw on a board. 3. Cut pastry into 4 triangles. 4. Transfer pastry triangles to a greased baking tray. 5. Brush each triangle with egg white. 6. Sprinkle 1/2 teaspoon brown sugar over each triangle. 7. Bake for 10 to 12 minutes until pastry is puffed and golden. 8. Let cool before serving.
  • In another bowl, add mascarpone and sprinkle with the remaining 2 1/2 tablespoons of brown sugar. Gently mix until combined. Chill in the refrigerator.
  • Mix all berries in a bowl. Halve the pastry triangles lengthwise using a sharp knife to create thin triangles. Spread mascarpone mixture on the pastry bases. Add berries and cover with the pastry tops. Enjoy!
