Smoky beer can chicken with sweet and spicy rub grilled over cherry wood chips.
Ingredients:
  • 2 cups cherry wood chips
  • 2 (12 fluid ounce) cans beer, half full
  • 0.5 cup dark brown sugar
  • 0.5 cup kosher salt
  • 0.5 cup paprika
  • 0.25 cup ground black pepper
  • 1 teaspoon cayenne pepper
  • 0.25 cup vegetable oil
  • 2 (3 pound) whole chickens
Instructions:
  • Allow the wood chips to soak in water for a minimum of 1 hour.
  • Preheat your outdoor grill to a cozy 350 degrees F (175 degrees C) for indirect cooking.
  • Combine dark brown sugar, kosher salt, paprika, ground black pepper, and cayenne pepper in a small bowl. Place two half full cans of beer on a baking sheet, then spoon 1 teaspoon of the seasoning mix into each can, being cautious as the beer will foam up and overflow.
  • Massage each chicken with 2 tablespoons of vegetable oil, ensuring the entire chicken is coated. Rub the remaining seasoning mix all over the chicken, both inside and out. Carefully place each chicken upright onto a can of beer, with the legs on the bottom to keep it steady.
  • Drain the wood chips and position them with the coals or in an aluminum pan on or under the grill grate following the grill's manual instructions. Stand two chickens on their cans directly on the grill. Grill with the lid closed until cooked through, about 1 hour 30 minutes, or until a meat thermometer reads 180°F (82°C) when inserted into the thickest thigh. Remove chickens from the grill, discard beer cans, cover with foil, and let rest for 10 minutes before slicing.
