Delicious chicken salad with toasted almonds and celery for crunch, great for using leftover chicken.
Ingredients:
  • 0.5 cup blanched slivered almonds
  • 0.5 cup mayonnaise
  • 1 tablespoon lemon juice
  • 2 cups chopped, cooked chicken meat
  • 1 stalk celery, chopped
Instructions:
  • Assemble all the ingredients.
  • In a frying pan, toast almonds over medium-high heat, shaking frequently and watching closely to prevent burning.
  • Combine creamy mayonnaise, fresh lemon juice, and a pinch of zesty pepper in a medium bowl.
  • Combine the chicken, toasted almonds, and celery together.
