Tender cranberry chicken thighs baked in a tangy-sweet sauce made with cranberry, apple cider vinegar, and mustard.
Ingredients:
  • 1 small onion, chopped
  • 1 tablespoon butter
  • 3 pounds chicken thighs
  • 1 (8 ounce) can whole berry cranberry sauce
  • 0.66666668653488 cup ketchup
  • 0.33333334326744 cup brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon dry mustard powder
Instructions:
  • Preheat your oven to 400°F (200°C).
  • Spread a layer of sliced onion and butter across the bottom of a 9x13-inch baking dish.
  • Bake in the preheated oven, stirring occasionally, until onion is translucent, about 15 minutes. Push onion to one side, then lay chicken thighs in a single layer in the dish. Return to oven and bake for an additional 25 minutes.
  • In a bowl, combine cranberry sauce, ketchup, brown sugar, vinegar, and mustard powder, stirring until well mixed.
  • Take the baking dish out of the oven. Mix the cooked onions with the cranberry mixture until combined. Pour the mixture over the chicken thighs and put the baking dish back in the oven.
  • Bake for an additional 20 minutes until the cranberry mixture caramelizes slightly and the chicken is fully cooked. Use an instant-read thermometer to check for doneness, ensuring it reads at least 165 degrees F (74 degrees C) near the bone in each thigh.
