Bethmännchen (German Marzipan Christmas Cookies)

German Christmas marzipan cookies, Bethmännchen, easy homemade recipe.
Ingredients:
  • 14 ounces marzipan
  • 1.25 cups blanched almonds, halved
  • 1 large egg white
Instructions:
  • Preheat your oven to a toasty 200 degrees F (95 degrees C) and line a baking sheet with parchment paper for easy cleanup.
  • Take the marzipan and knead it thoroughly. Then, divide it into approximately forty 1 1/2-inch cubes that are all the same size. Roll each cube into a ball and shape it into a round cylinder with a pointed end.
  • Place 3 almond halves, pointy side up, on top of each marzipan cylinder.
  • Lightly beat one egg white in a cup, then brush each cookie with the egg white before placing them on the prepared baking sheet.
  • Bake in the preheated oven until the almonds turn lightly browned on top, approximately 15 minutes. Allow to cool on a wire rack before storing in airtight containers.
