Light and fluffy Polish bialys with savory onion-poppy seed filling are a must-try twist on traditional bagels!
Ingredients:
  • 3.75 cups bread flour
  • 0.5 teaspoon instant yeast
  • 1.5 teaspoons kosher salt
  • 1.5 cups water, at room temperature
  • 1 large yellow onion, diced
  • 0.5 teaspoon kosher salt, plus more to taste
  • 1 tablespoon bread crumbs
  • 2 teaspoons poppy seeds, plus more for garnish
  • 1 tablespoon sliced green onion
  • 1 pinch cayenne pepper
Instructions:
  • In a bowl, mix together bread flour, yeast, salt, and water to form a very wet, soft, and sticky dough. Stir with a wooden spoon until combined. Cover and let sit at room temperature for at least 12 hours.
  • When it's time to prepare the bialys, warm the olive oil for the filling in a skillet over medium heat. Sauté the onions with salt until they become soft, sweet, and golden brown, about 10 minutes. Remove from heat and mix in the bread crumbs, 2 teaspoons of poppy seeds, green onion, and cayenne pepper. Stir well to combine and allow the mixture to cool until ready to use.
  • Uncover the bubbly dough and transfer it to a floured work surface, using a spatula to scrape it from the sides of the bowl. Gently press the dough to flatten, sprinkle with a little flour, and divide it into 8 equal portions. Roll each portion into a ball, using flour as needed. Gently stretch and tuck the dough under to form a smooth ball. Place the balls on a baking sheet lined with generously floured parchment paper or a silicone liner. Dust the tops with flour, cover with a dish towel, and let proof until doubled in size, 45 to 60 minutes.
  • Preheat the oven to a piping hot 500 degrees F (260 degrees C).
  • Dust your fingertips with flour and gently shape each dough ball into a thin ring, ensuring the center is thin and the edges are thicker. Be gentle to avoid tearing the dough. Repeat with the rest of the dough balls.
  • Place a rounded teaspoon of onion-poppy seed filling in the center of each bialy. Gently press the filling towards the outer rings. Spray the bialys with cold water and sprinkle poppy seeds on top.
  • Place in the center of the preheated oven and bake until puffed and golden, approximately 12 minutes. Let cool on a wire rack for around 20 minutes before serving.
