Delicious Polish sausage skillet with cabbage and potatoes - a hearty crowd-pleaser for camping or busy nights.
Ingredients:
  • 3 large potatoes, cubed
  • 0.25 cup butter, divided
  • 1 pound Polish kielbasa sausage, cut into 1/2-inch slices
  • 2 onions, chopped
  • 1 large head cabbage, coarsely chopped
  • 2 (15 ounce) cans diced tomatoes
  • 0.25 cup white sugar
  • 1 tablespoon paprika
Instructions:
  • Microwave potatoes in a microwave-safe bowl until partially tender, about 8 minutes.
  • In a Dutch oven or large cast iron skillet over medium heat, melt 2 tablespoons butter until sizzling. Add sausage and onions, cooking and stirring until browned, approximately 5 minutes. Transfer the flavorful mixture to a bowl.
  • In the same Dutch oven, melt the remaining 2 tablespoons of butter and sauté the cabbage until tender for about 5 minutes.
  • Mix together tomatoes, sugar, and paprika in a bowl. Pour the mixture over the cabbage and bring it to a boil. Lower the heat and add the potatoes and sausage-onion mixture. Cover the Dutch oven and simmer until the potatoes are tender, approximately 40 minutes.
