Big Ray's White Bean, Kale, and Kielbasa Soup

Hearty kielbasa bean soup with Polish sausage is perfect for cozying up on chilly days.
Ingredients:
  • 1 bunch kale, stems removed and discarded
  • 1 tablespoon olive oil
  • 8 ounces kielbasa sausage, sliced thin
  • 1 bunch green onions, sliced
  • 3 cups chicken broth
  • 1 (15.5 ounce) can white beans, drained and rinsed
  • 0.5 teaspoon salt
  • 1 pinch ground black pepper to taste
  • 1 pinch grated Parmesan cheese, or to taste
Instructions:
  • Create elegant kale ribbons by tightly rolling the leaves and cutting them into 1/4-inch strips.
  • In a large, heavy saucepan over medium heat, warm the oil. Sauté the kielbasa in the hot oil until browned, approximately 5 minutes. Next, mix in the green onions with the sausage and cook until the onions soften, around 3 minutes. Finally, add the kale and cook, stirring, until the kale wilts, about 3 minutes.
  • Cover the kielbasa mixture with chicken broth, then add beans and stir. Bring to a boil, then simmer on low heat until kale is tender, around 15 minutes. Season with salt and pepper, then sprinkle Parmesan cheese on top.
