Filipino biko: Sticky rice cooked in coconut milk, baked with coconut topping.
Ingredients:
  • 4 cups uncooked glutinous white rice
  • 6 cups cold water
  • 1 (14 ounce) can coconut milk, divided
  • 1.3333333730698 cups white sugar
  • 1.3333333730698 cups brown sugar
  • 3 tablespoons coconut preserves (such as Phil Supreme®)
Instructions:
  • Allow the rice to soak in water overnight.
  • Preheat your oven to 350 degrees F (175 degrees C) and grease a 9x13 inch baking pan.
  • Simmer the soaked rice along with the soaking water, 1/2 can of coconut milk, and white sugar in a saucepan over medium heat, stirring frequently, until the rice is tender and the mixture thickens, which should take around 20 minutes. Transfer the mixture to the prepared baking pan.
  • Combine the brown sugar, 1/2 can of coconut milk, and coconut preserves in a small saucepan. Bring the mixture to a boil, then pour it gently over the rice.
  • Bake in the preheated oven for 25 minutes until the topping thickens. Allow it to cool completely, then cut into squares to serve.
