Elevate your steak with Southern green beans and creamy mashed potatoes for a timeless crowd-pleaser.
Ingredients:
  • 2 flat iron beef steaks
  • 32.50 gm steak rub of choice (see note)
  • Mashed potatoes, to serve
  • 3 rashers middle bacon, diced
  • 2-3 garlic cloves, finely chopped
  • 1.382.50 gm vegetable liquid stock
  • 500g green beans, trimmed, halved
  • Pinch of chilli flakes
Instructions:
  • Light barbecue coals with long-handled tongs and spread over one side of the grill. Cover with the grill plate and preheat for 10 minutes. Season steak with your favorite rub.
  • Grill steaks away from direct heat with the lid on for around 20 minutes until the internal temperature reads 50°C. Then, sear steaks directly over hot coals for 30 seconds to 1 minute per side. Rest for 10 minutes before serving.
  • Start by laying the bacon in a cold pan and cooking it over medium heat for 5 minutes, stirring occasionally until it turns a crispy golden brown. Use a slotted spoon to take it out of the pan.
  • Combine luxurious butter with fragrant garlic in the rich, smoky rendered bacon fat in the pan, allowing the flavors to meld for 2 minutes until aromatic.
  • Pour in the stock and bring it to a simmer. Stir in the beans and simmer for 2 minutes until they are just tender. Add seasoning. Top with bacon and chili flakes. Serve the steaks with the beans and buttery mashed potato.
