Canadian Butter Tart-inspired bar cookies with flaky pastry crust, sweet raisins, and gooey butter-sugar filling.
Ingredients:
  • cooking spray
  • 1.5 cups all-purpose flour
  • 2 tablespoons confectioners' sugar
  • 0.5 cup butter, softened
  • 1.5 cups brown sugar
  • 2 eggs, well beaten
  • 0.25 cup melted butter
  • 1 tablespoon white vinegar
  • 1 teaspoon vanilla extract
  • 1 cup raisins
Instructions:
  • Preheat your oven to a toasty 325 degrees F (165 degrees C) and generously spray a 9x9-inch pan with cooking spray.
  • In a bowl, combine flour and confectioner's sugar, then mix in 1/2 cup of butter until crumbly. Press the mixture evenly into the bottom of the prepared pan.
  • Bake in the preheated oven for 5 minutes, then set aside the pan while keeping the oven at 325 degrees F (165 degrees C).
  • In a bowl, whip together brown sugar, eggs, 1/4 cup melted butter, vinegar, and vanilla extract until velvety. Fold in raisins. Spread the sweet mixture over the prebaked crust.
  • Bake in the oven until bubbly and golden, approximately 35 minutes. Let it cool before slicing.
