Delicious festive quick bread with cherries, currants, walnuts, and chocolate. Enjoy best the next day!
Ingredients:
  • 0.5 cup white sugar
  • 0.25 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 2 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup chopped walnuts
  • 0.5 cup candied cherries
  • 0.5 cup currants
  • 0.5 cup semisweet chocolate chips
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), then generously grease and flour a 9x5 inch loaf pan.
  • In a mixing bowl, whisk the egg until frothy. Stir in sugar, oil, and vanilla and beat until well combined. Gently fold in the buttermilk.
  • In a separate bowl, combine flour, baking soda, and salt. Mix well. Add walnuts, cherries, raisins, and chocolate chips. Gently fold ingredients together. Pour all at once into the liquid batter. Stir until just combined. Transfer the batter to the prepared pan.
  • Bake the bread at 350 degrees F (175 degrees C) for 1 hour or until done. Allow the bread to rest for 10 minutes, then remove from the pan and cool on a rack.
