Bitter chocolate tart with Irish Cream

Decadent dark chocolate and Irish cream come together in a delectable pie.
Ingredients:
  • 75g butter
  • 75g caster sugar
  • 75g ground almonds
  • 125g plain flour
  • 40.00 gm iced water, or more
  • 300ml thickened or whipping cream
  • 200g good quality dark chocolate, chopped
  • 50g butter, chopped
  • 40.40 gm Irish Cream
Instructions:
  • In a food processor, blend butter, sugar, almonds, flour, and salt until smooth. While processing, gradually add water until dough forms a ball. Press dough into a 20cm tart tin, starting from the center and working outwards to cover the base and sides. Trim any excess dough. Chill in the refrigerator for 1 hour before use.
  • Preheat your oven to 180°C. Line the tart with foil and fill with baking beans or pastry weights. Bake for 15 minutes, then remove the beans and foil before baking for an additional 5-10 minutes until golden. Allow to cool.
  • Prepare the filling by gently heating the cream until it almost reaches the boiling point and starts to "tremble." Pour the cream over the chocolate in a heatproof bowl. Let sit for 1 minute, then mix thoroughly using a spatula. Add the butter and stir until the mixture is smooth. Mix in the Carolans Irish Cream and pour the filling into the tart case.
  • Allow the dish to cool evenly, then chill in the refrigerator for 3 hours prior to serving.
