Wholesome flourless brownies with avocado for a quick and healthy gluten-free indulgence.
Ingredients:
  • cooking spray
  • 1 (15 ounce) can black beans, rinsed well and drained
  • 3 eggs
  • 0.5 avocado, mashed
  • 1 teaspoon vanilla extract
  • 0.5 cup brown sugar
  • 0.33333334326744 cup unsweetened dark cocoa powder
  • 0.5 cup miniature semisweet chocolate chips
Instructions:
  • Preheat the oven to 350°F (175°C) while you coat a 9-inch baking pan with nonstick cooking spray.
  • In a large bowl, combine eggs, mashed avocado, and vanilla extract. Mix in black beans. Blend everything with an immersion blender until smooth batter forms and black beans are fully mashed.
  • Combine brown sugar and dark cocoa powder in a separate bowl, then add to the batter. Mix by hand with a wooden spoon until well combined. Gently fold in chocolate chips, then pour the batter into the prepared pan.
  • Place the dish in the preheated oven and bake until a knife inserted in the center comes out clean, which should take about 25 to 30 minutes. Allow it to cool fully before slicing and serving.
